Candied ginger is a perfect and original delicacy that can be served with tea. Candied ginger also brings relief when having a cold. Candied ginger can be bought in various stores and also in many e-shops. (It is also possible to buy ginger candies.) You can also make your own candied ginger. It is simple, but it takes slightly more than one hour. First peel your ginger root and then cut it into slices or cubes.
Cook the slices or cubes in boiling water for about half an hour. Than add approximately the same amount of sugar as was the weight of the used ginger root. Cook for another half an hour, until most of the water evaporates and the pieces of ginger get darker and a little bit transparent. Cover the pieces in sugar and let them dry either on air, in oven or in microwave. (But be careful, leave the pieces only few seconds in the microwave, not tens of seconds!) In order to make your production a closed-cycle technology, you can use the sugar syrup and the water in which the cut ginger was boiled to make
ginger drink,
ginger tea or
ginger ale.
